My family eats these for snacks as well as breakfast. For that reason, about once a month, I make a BIG batch to keep in the freezer. There are several versions that I make (bacon and no peppers for the college kid), but this is the most popular at our house:

2 packages of frozen peppers and onions (I use the Kroger brand)
1 roll of sausage
1 dozen large eggs
Pkg of shredded cheddar cheese
2 Pkgs of Soft Taco Shells (I’ve used every size)

Saute the onions and peppers in butter until softened, set aside. In a separate pan, brown the sausage and drain the grease. In a third pan, or the onion and pepper pan, scramble the eggs in your favorite manner (we like to add a little milk and salt & pepper).

All the cooked ingredients can be mixed together in a large bowl and spooned into each tortilla, or you can stack the peppers & onions, sausage, and scrambled eggs on each shell. This should be done in a line down the middle, just like a taco. On top of the meat/egg mixture sprinkle cheddar cheese. Roll each tortilla as tightly as possible. Wrap in saran wrap and freeze.

To cook, remove saran wrap and wrap in a paper towel. Cook in microwave for 2 and a half minutes. Enjoy with salsa, sour cream, or hot sauce of your choice.
