Dumplings recipe

This is a favorite recipe at our house because I always have the ingredients, and everyone will eat it. My aunt Polly taught me how to make them, of course she doesn’t measure so I had to figure out the measurements.
Dumplings –
Meat – your choice chicken or squirrel, boiled to cook and make broth. I boil about an hour in a large stock pot.
Optional : 3/4 cup of fresh carrots sliced- put these in and cook these with the meat. This is my way of sliding a veggie in on the kids.
After the meat is cooked, take it out to cool and debone. Take out a cup of broth to cool.
Turn the broth heat to high. You want it at a hard boil when you start dropping the dumplings .
Next mix together
3 cups all purpose flour
1/2 teaspoon season salt
1/2 teaspoon black pepper
2 eggs
1 cup of broth- cooled or it will scramble your eggs
Mix all together and turn out on a floured surface
Roll out dough on floured surface
Cut into pieces (We use a pizza cutter to cut. My kids love to help with this.)
Drop dumplings in boiling broth
Stir frequently
Add deboned meat
Reduce heat and Simmer for 20 minutes
My family likes to sprinkle season salt on top of their bowls of dumplings.
