Granola Bomb

This recipe really started out with good intentions. I was looking for a family friendly high fiber snack. As with any good project I did my research. I searched and read all the granola recipes on Pinterest. No particular recipe meet my needs or exact taste. The family won’t tolerate coconut and it was in most of the recipes. So after reading 20 or 30 recipes I decided to whip up my own. I’ll keep it simple and just use a few of the ideas I saw. I’ll use applesauce instead of butter because it is healthier. I’ll use oats and nuts only. I’ll add a little pumpkin pie spice and brown sugar for flavor, everyone at my house loves pumpkin pie. I’ll toast it up and wow the kids with a great treat. WRONG! YUCK! I think horse sweet feed would have have beaten my granola in a taste test! (Not that I have tried it!). So now I have a giant bowl of toasted oats. What to do? Mucking Mom to the rescue!
So to heck with healthy if the kids won’t eat it. Mrs. Carole’s Special Carmel coating to the rescue. I whipped up a batch and pored it all over the lifeless oats and BAM! Thanks Carole for being my hero. This is one high fiber after school snack my children will love! Check out my Yummy Carmel Granola Recipe.
